The mouthwatering smoked meats cooked up and served at The Barn-B-Que Smokehouse daily are generally the "star" of any meal served here. Of course, those magnificent meats are complimented beautifully by their ever-present "co-star", BBQ sauce. The best BBQ at the Lake of the Ozarks can be enjoyed here at the Barn with your choice of 5 different sauces. We'll share more about our BBQ sauce varieties later but first, a few fun facts about this irresistible ingredient.
Did You Know...
BBQ sauce is not only used to enhance the fantastic flavors of hickory-smoked meats as a sauce after they are done cooking. It can also be used as a marinade before smoking or grilling and you can baste the meat with it during cooking. This is one ingredient that tastes terrific with pretty much every type of meat you can eat!
Some historians place the origin of BBQ sauce in the 17th century when the first American colonies were forming. References to this type of sauce were found in literature over the following 20 years both in English and in French.
The earliest of homemade sauces usually contained just vinegar, salt, and pepper. (Wow! We've come a long way from that simple recipe!) In the 1920s, sugar, ketchup, and Worcestershire sauce began showing up in recipes and after World War II, the amount of sugar and other ingredients increased dramatically.
BBQ Sauces Across the Country
You're very likely to get different kinds of BBQ sauce depending on where in the USA that you are eating. Specific areas take pride in their own "secret recipes". Some of these include:
- Kansas City
Thick, sweet, and spicy. - St. Louis
Tomato-based, sweet yet slightly acidic. - North Carolina
The eastern half of the state prefers a vinegar-based sauce while the western half most often uses a tomato-based sauce. - South Carolina
The southern portion of the state prefers a mustard BBQ sauce. - Alabama
White sauce made with mayonnaise, vinegar, pepper, lemon juice, and horseradish. - Kentucky
Worcestershire-based sauce.

A sweet yet slightly tangy sauce. - Tangy
Similar to our sweet sauce but slightly thinner with more vinegar. - Mustard Sauce
A Carolina-style vinegar-based sauce that's excellent with pork, turkey, or chicken. - Alabama White Sauce
Our take on a mayonnaise, horseradish, and vinegar sauce. - Tennessee Hot
A sweet start with a little heat on the back end, but not too much!
